    As such, I have created these as a “one-handed no-mess” treat. This means your guests can continue to hold their drinks with one hand and take a canapé with the other. This in itself is an idea you should consider when serving any canapé! Some canapés can be refrigerated and brought out when required; others need to be made and brought out immediately. At the end of each recipe I have indicated my preference, however, on the day this will be your choice. I love to create, cook, test, tweak cook and yes ... repeat! That's why I started this volume series. It has been a big task. I have found that, when you do something you love, the hard work becomes enjoyable. I trust you will make some of these treats for your guests, and have as much fun as I have had while creating them for you.

    However, when prepared along with certain herbs, spices, and sauces, the meat flavours are enhanced to a new level. That was my intention when creating this book for you.

     

    By adding these ingredients to the meat; either before, during or after cooking, the dish changes into a delicious meal you will be proud of offer your family and friends.

     

    Try an easy recipe right now; such as the Eye Fillet Surf & Turf, or the Coated Steak. Both are quick and easy to prepare, yet deliver a nice tasty punch.

     

    Some recipes are a little more complicated; such as the goat curry or beef cheeks. These are best enjoyed during the cold winter months. Here I recommend you tackle these recipes over a weekend. If you purchase all the ingredients during the week, you have the whole day to relax and enjoy your cooking; along with a glass of your favourite red!

     

    I trust you enjoy what I have brought to you in this book. I have had great fun creating these recipes. Now it's your turn.

    I have created these recipes to be packed with flavour, yet not break the family budget.

     

    The only five exceptions to this would be the three duck and two spatchcock recipes.

     

    Duck can be delicious when prepared correctly; however, I highly recommend you try the Pan Roasted Spatchcock first. Although expensive, this is a tasty delicacy everyone should enjoy.

     

    Poultry recipes are usually easy to prepare; except perhaps for the chicken curry. The others have been created as 'in-the-week' or  'on-the-run' type meals. We are all busy and need to get things done.

     

    As you have seen throughout my other books, I love to make my own sauces and gravies. These homemade sauces and gravies add that special touch not found in a bottle!

     

    Browse through these delicious recipes and bookmark those you want to do quickly; and those which should be left for the weekend.

     

    I trust you will have as much pleasure in cooking, and enjoying these meals with your family, as I have had in creating them for you.

    There is nothing better than to start the day with a thick fillet of Rare Crispy Skin Salmon and a few pieces of Fresh Fruit. Yum!

     

    Throughout my recipe books, I have spoken of sauces, relishes, and gravies. However, when it comes to salmon, you need not add anything.

     

    There is, of course, one recipe in this book that I must draw your attention too. It is the Seafood Pie. This recipe is best appreciated on a cold winters night. It consists of the mixed fish component, a rich, creamy white soup-like sauce, and the fresh herb and cheese mash potato. Offer this one to your family and friends - and watch them come back for more!

     

    Out of all the recipe books I have written, this seafood book cost me the most to create. That’s just the nature of the market. Treating ourselves to a tasty meal, as often as possible, is what makes life worth living.

     

    At the end of the day, have fun in the kitchen. Spill a bit, mess a bit, laugh a bit and...well...perhaps drink a bit.

    When I talk to my vegetables, they talk back to me. Often they tell me how they would like to be prepared; so they can deliver maximum flavour.

     

    For example, my granny would cook, or simmer, her vegetables in boiling water for more than an hour. She would then strain the nutrients down the drain and dish up the pulp!

    In my opinion, dead vegetables have no place on the dining room table.

     

    Raw is always better, but not possible with some varieties. In these cases, I lightly roast, bake, boil or stir-fry my veggies. Of course, you can use the microwave - but again this is just a faster way to send your veggies to heaven!

     

    If you need a quick twist to your potatoes, I suggest you try my Creamy Mustard & Fennel Potatoes.

     

    In any event, have fun and enjoy the time you spend with your vegetables!

    At first, when creating these for you, I was a little sceptical about what the flavours may turn out to be. That concern was quickly doused when the meal landed on the plate.

     

    Vegans enjoy some very bold and deliciously tasting meals. As a person who loves to cook with fresh ingredients; and produce delicious meals, I am especially proud to bring you this book.

     

    My photographer has three recipes which he highly recommends and says you must try. The Quinoa Salad with Pomegranate Dressing. The Mexican Bean Salad and the Granola Mango Sorbet.

     

    I trust you enjoy preparing these recipes for your family and friends, as I have had in creating them for you.

    I have created these Budget recipes for you; with a limited amount of money in mind.

     

    The questions I asked myself were;

    • How do I create tasty meals on a budget?
    • Which every-day; inexpensive ingredients can I use, yet still come out with an amazingly tasty meal?
    • What can I do to turn an ordinary meal, such as Meatballs and Spaghetti, into an extraordinarily delicious meal?

     

    I walked up and down the store floor for hours in search of ideas. Once I got an idea, I would rush home to my mums' kitchen and immediately went about preparing the evening meal .... then, with bated breath ... I waited for the reaction from the family.

     

    The 20 recipes in this book got the family's highest praise.

    The "yummy", "delicious", "tasty" and especially the ... "can we get some more", remarks. (Especially about the pies made from leftovers)

They are easy to make, rich in flavour and are all lovely moist desserts. If you are a dessert lover, (and let’s face it - who isn’t) then don’t forget to check out the extra three vegan desserts in my Vegan Vol. 6 book. OK ... I'll admit it. Once I had completed this volume, I had to break out my gym clothes. No question about it. Sweet desserts are delicious. By the time I had completed this volume, my waistline had grown one size bigger. I had fun with this volume. As did my neighbours, their neighbours, and their neighbours! There were many desserts to make and remake, so I sent some down the street. I trust you go ahead and try these recipes. They are well worth the effort.

Mum showed me how to make her Muesli Buttermilk Rusks, which she enjoys with a cup of tea in the mornings. My sister asked me to create a gluten-free biscuit. My Gluten-Free White Chocolate and Macadamia Cookies, and my Gluten-Free Double Choc Cookies developed from that request. Not wanting to feel left out, I created my Peanut Delight. I trust there is a recipe (or recipes) you are drawn toward. Something you can make and slip into the kid’s lunch box. In any event, give them a try and see how you go.

    In a nutshell; there is a drink in this book for everyone. Please do not give any alcoholic drink to an under-age person, or someone on medication. The alcohol components in these recipes can be eliminated without a dramatic change to the outcome.

     

    I am particularly proud of my Choc-mint Frappé and Watermelon Lime & Mint Cooler. When served cold, these are a delicious afternoon drink enjoyed outside on a hot day.

     

    Some drinks are best served cold, and others hot. In this book, I have created an array of different drinks for you to choose. Each has its place; either in the summer or winter, after a gym session or on the terrace with friends.

     

    Either way, I’m sure you will find a drink to enjoy.
